Building Finessence is a long time dream come true. To kick-start 2022, Mandy took a leap by opening Finessence, her own pastry workshop to realize a goal she had since age 15. She launched the brand with Galette des Rois, the French almond cream puff pastry, exclusively for the month of January.
Mandy built a solid culinary background working her way up in Michelin-starred establishments (L’Atelier de Robuchon) and five star hotels: The Ritz-Carlton and The Peninsula. Her latest position was the Pastry Chef at the French fine-dining restaurant, L’Envol, at The St. Regis Hong Kong. In 2021, She was awarded 100 Top Tables’ Best Pastry Chef award.
A blend of passion and motivation to achieve the best, Mandy combines French technique with her own twist using top ingredients to bring thoughtful artistic pastry to Hong Kong.
