Winter is upon us and we are switching out our signature Flan Pâtissier to a seasonal aromatic version, through infusion of the Tonka Bean. This black wrinkled exotic spice from the Amazon may not look much appealing, but those who have tasted it will not forget its distinct complexity, its warmth-giving reminiscent of vanilla, liquorice, cinnamon and clove. Once baked, we pour over the top a runny layer of rich nutty pecan praline that suits perfectly with irresistible charms of tonka bean.
