The light & delicate cheesecake you must try. This cake was inspired by one of Chef Mandy's signature dessert during her time at L'Envol. "La Pomme Granny Smith" brought a delight ending to the meal and was well loved by guests. Mandy decided to re-create this dessert into a cake form.
The sour, fragrant and slight bitterness of yuzu flavour blended into a cream cheese mousse, giving our POMPOM cheesecake the perfect balance of creaminess and citrus. The eye-catching bright green glaze comes naturally from green apples. As you cut into the cake, another layer reveals itself: the granny smith apple compote with a unique twist using dill. Last but not least, the cheesecake crumble with citrus zest ties it up into a citrus paradise.
