About Mandy

Mandy built a solid culinary background in L’Atelier de Robuchon, The Ritz-Carlton and The Peninsula. Her last position was the Pastry Chef at the French fine-dining restaurant, L’Envol, at The St. Regis Hong Kong. Mandy was awarded 100 Top Tables’ Best Pastry Chef award in 2021.

Launched in January 2022, Finessence Patisserie combines French technique with Mandy's own twist using top ingredients to bring thoughtful artistic pastry to Hong Kong.
